My favorite meal of the day is definitely breakfast. If I could eat breakfast foods all day, I would, which is probably why it’s the only meal I really know how to cook. And if I had to pick one favorite breakfast food, it would definitely be french toast. I love french toast. If I could eat it every day, I would, and thanks to my favorite healthy french toast recipe, I can.
This healthy french toast recipe is probably one of my most requested recipes. I like to make it on weekend mornings, and I always get questions when I post about it on Instagram. My kids love it, my husband (who hates “healthy” tasting food) loves it, and I love it and don’t have to feel guilty eating it. The best part? It’s SO easy to make and takes like ten minutes. I use Ezekiel Bread for this recipe because it’s hearty, filled with nutritious whole grains and none of the bad chemicals and preservatives and it’s low-glycemic. Personally, I also think Ezekiel bread is great for making french toast, but you can also substitute another multigrain or gluten-free bread of your choosing.
Here’s my favorite healthy french toast recipe. I haven’t really shared recipes before, so let me know if it’s something you want me to keep sharing more of.
Ingredients:
-Organic Butter (to grease pan)
-6-8 slices of Ezekiel Bread or other multigrain bread that you prefer
-2 Organic Eggs
-1/2 Cup Organic Whole Milk (I prefer Whole milk, but when going dairy free, Almond or Coconut Milk also works well)
-Cinnamon (I don’t stick to a certain amount, I use lots of it, and add more along the way)
-Pinch of Salt
-1 Teaspoon Vanila Extract
Serve with:
-Organic Maple Syrup
-Organic Raspberries and Blueberries
Directions:
- Mix all items together in large bowl except bread
2. Dip bread into mixture until soaked on both sides
3. Butter skillet and heat on medium until browned on each side
4. If you like yours a bit more crispy, stick cooked french toast in oven at 450 degrees for a few minutes/while you wait for the rest to cook
