I’m a creature of habit, especially when it comes to what I eat. Honestly, I’m so busy and constantly making a million decisions a day between work and my family that I like to limit the rest of the choices I have to make on the daily. I am not one of those people who can skip meals, so I need a game plan for what I’ll eat every day, especially if I want it to be something nutritious that won’t make me lethargic or feel guilty (i.e., so I don’t just grab a bag of Pop Chips and Coke Zero or eat the kids leftovers). I know some people don’t like to eat when they wake up, but I’m one of those people who needs to eat breakfast. Pregnant or not, I can’t function if I miss breakfast. I also happen to love breakfast foods and like to make it really filling to give me energy to get shit done in the mornings (my most productive time) and to make it until lunch. I used to eat peanut butter toast and a latte every morning that I would eat either on the way to the office or at my desk (we have an awesome cafe at work with lots of breakfast options). But when I was struggling to get pregnant and diagnosed with PCOS, I decided to try a special fertility diet and going gluten free was recommended to me to help control my PCOS and prevent miscarriage. I’m not a medical expert and this is not something my OB or fertility doctor suggested, but it was something I read about and gave me a sense of control at a time when it felt like there was little else I could do. But adopting a gluten free diet meant I had to change my daily breakfast of choice, and I found this awesome alternative from a nutritionist mama I follow and love, Nutrition by Nathalie. Now months later, and I find this filling gluten free breakfast is still one of my favorite ways to start off my day.
I need something pretty quick and easy in the morning. Getting both kids off to school is no joke and if I’m commuting into the city for work it’s even more of a rush. I like to eat with the kids in the morning, and it’s super easy to whip up this filling gluten free breakfast in a few minutes before the rush to get dressed and out the door. My kids are actually fans of it too, so sometimes I’ll make it for everyone. I love that it includes protein, fruit, and leaves me satiated until lunch (here’s my go-to lunch for anyone looking for a yummy salad that will fill you up). Easy Filling Gluten Free Breakfast Recipe
Greek Yogurt -I am allergic to dairy but can tolerate Greek yogurt (this is my favorite) but you could also use a dairy free alternative like Oatly’s or Forager’s cashewmilk yogurt
Organic Berries and Bananas -I usually use whatever we have in the fridge but my favorite is a mix of blueberries, strawberries, raspberries and thinly sliced banana
Gluten Free Granola – my favorite is Purely Elizabeth in the original flavor
You can eat it in a bowl at home or I’ve seen Nathalie package it in a to-go container for her and her husband when they’re on the road, which I think is genius. It also makes a great snack or lunch.
