I love french toast. It’s one of my favorite foods and although the rest of my family has not warmed up to it quite as much, I’m actively trying to convert them. I have shared my favorite healthy french toast recipe, which I love to make on weekends. I love that it’s not sugar-filled and made with nutritious ingredients but still tastes great and satiates. My kids actually like it as well, so I consider it a huge wine. However, in my quest to evolve our breakfast menu, learn to cook more, and eat anything french toast related, I have mastered a delicious healthy french toast casserole that I wanted to share with you.
I actually discovered this delicious breakfast dish quite by accident. I had planned to make my favorite healthy muffins with the kids, but I realized as we started that we were out of Greek yogurt. In an effort to pivot so as not to waste the ingredients we had already mixed (note: get out all the ingredients before beginning next time) and to avoid any meltdowns, I decided we could make healthy french toast. But since it was 4pm, I decided to try to make a healthy french toast casserole instead, so we could stick it in the fridge and reheat it for the next day (though in retrospect we should have just had breakfast for dinner).
I love this twist on french toast that’s still made with nutritious ingredients and not a total sugar and calorie bomb. I also love that it packs in protein while still offering a sweet treat, especially when served with maple syrup. The recipe couldn’t be easier to make and the kids can easily help without making (too) big of a mess.
Healthy French Toast Casserole Recipe
Ingredients
Whole Grain Bread (we use Dave’s Killer Bread – slightly stale is always best)
4-6 Eggs (the more eggs, the fluffier)
2 Bananas
1 Cup Milk
1 Tablespoon Vanilla Extract
Cinnamon (I don’t measure but tend to use a lot so that the liquid mix turns a nice yellow/brown color after adding eggs and cinnamon and milk)
1 Teaspoon Salt
Fruit of Your Choice for Topping (we actually used frozen blueberries and strawberries this time and were happy with the results)
Directions
Grease casserole dish
Rip up bread into small pieces so covers casserole dish
Combine the rest of the Ingredients
Pour over the bread
Bake at 425 for 30-40 minutes
Let cool and enjoy
Serve with maple syrup and any other toppings of choice
